Greek soup with beans ("fasolada") - Our traditional dish

Cold weather? it is time for fasolada !
  • 500g. dried beans (medium size)
  • 3 stalks of celery
  • ½ cup olive oil
  • 2 carrots cut into small pieces
  • 1 big onion finely chopped
  • Salt-pepper (at your preference)
  • 2 tbs tomato paste (peltes tomatas)
Soak the beans overnight.

Place the beans in saucepan and cover them with water. Boil them until slightly tender.

Then drain in a colander.

Put 3 tbs of olive oil in a pan and  add the onion, celery and carrots and sauté for about 2 minutes.

Add the beans in the pan and the tomato paste and pour in boiling water as to cover the beans by blending lightly.

Simmer the fasolada until the beans are tender and at the end of cooking time add the remaining olive oil, salt and pepper.

Boil for a little time more until fasolada becomes creamy.

Ιf you are in hurry, use the kettle and in 20 minutes it will be ready!


Healthy tips : Beans are very nutritious because they are rich in fiber (help fullness), proteins, vitamin B complex and iron. A good combination could be beans and bread or feta cheese , olives with lemon because of the vitamin C that lemon contains and enhances the absorption of beans΄ iron, salted fish (after being washed well) or fresh salad.
